Igeta Usukuchi
Igeta Usukuchi
Inoue Honten's Igeta Usukuchi is a traditional, additive-free light soy sauce (Usukuchi Shoyu) made by Inoue Honten, a 6th generation soy sauce producer in Nara, Japan. It's brewed using a traditional method with Japan-sourced soybeans and wheat, and aged for about a year, sometimes 1.5 years. The "Usukuchi" style is known for its lighter colour and higher salt content compared to regular soy sauce, while still maintaining a balanced flavour. It's particularly well-suited for finishing dishes or seasoning, as it enhances the natural flavours of the ingredients without overpowering them.
