He wanted more interesting beer varieties in Japan and after the brewing laws changed in 1994, he was able to establish a small craft beer brewery of his own. He chose the city of Minoh in north-western Osaka, famous for its national parks and wild monkeys.\u003c\/p\u003e\n\u003cp\u003eThe Baton 009 is built on a Pilsner base, infused with carefully selected ripe Ume from Wakayama. It has been matured slowly for approximately 11 months to achieve its peak complexity. Upon pouring there is a sweet and tart aroma of Ume harmonised with soft woody notes from the Foeder.
